easiest thing in the world...a warm tortilla, a fried egg and salsa...for
each serving, heat one or two corn (not flour) tortilla(s) by dipping in
hot oil, or by spritzing one side of each with cooking spray and heating
in a dry skillet, turning the stack frequently, and turning the warm
tortillas into the middle of the stack -- you need to pay close attention
if doing it this way, but it produces the best results with the
commercial (read stale) tortillas i get in the supermarket); place on
plate, top with the fried egg(s) -- white set and yolk runny -- and
smother in your favorite salsa...
