We owe our neighbors to the south a huge debt when it comes to chocolate.
It was the pre-Columbian Mayans who were the first to cultivate chocolate
in plantations in the Yucatan around 600 AD.

The Aztecs ground cacao beans, mixed them with chile peppers, vanilla, corn
and annatto. The resulting paste was dried in discs and rehydrated with
cold water. Montezuma is said to have consumed 50 cups of chocolate a day.
