On the ABMTalk list we had the Hunka' Hunka' Burnin' Jalapeno Bread to
test this week (every week we have a test loaf that everyone does in
their ABM to see what the differences are - how much water it needs,
extra flour?). I decided to make it today but I made rolls out of mine
and I added some cheese. Here is what I did (of course, they did not
come out that spicy but they are tasty. Next time, I'm using habanero or
chipotle or maybe some home grown & ground pequin.

                Hunka' Hunka' Burnin' Jalapeno Jack Rolls

  Amount  Measure       Ingredient -- Preparation Method

     1/2  cup           warm water
   1                    egg
   1      tbsp          butter -- melted
   1      tbsp          honey
   2      cups          bread flour
     1/4  cup           cornmeal (yellow, white or blue)
   2      tbsp          buttermilk powder
   1      tsp           sea salt
   1      tbsp          dried jalapeno
   1      tsp           instant yeast
   2      tsp           enhancer
  1/4     cup     	monterey jack -- shredded

Set to dough cycle. Place ingredients in machine according to
manufacturer directions. Place cheese in at the beep. When dough is
ready, take out and cut into 12 pieces. Roll each into a ball. Flatten
the ball and roll up sort-of crescent style. Place on floured board (or
cookie sheet). Cover and let rise for 30 minutes or so until doubled in
bulk. Slash tops with serrated knife or lame. Glaze if you wish.

Preheat oven to 400°F. Make sure pizza stone is in oven. When hot, turn
heat down to 350°F and place rolls in (on cookie sheet). Let bake for 10
minutes. Take them off sheet and right onto hot pizza stone. Bake for
another 10-15 minutes until internal thermometer says 190°F. Remove from
oven and put on wire rack. Let cool completely.

Risa's notes: If you wish them to be hotter, use another type of chile,
dried & ground, or chop up some jalapenos and put them in at the beep.
Let them knead in.
