Hi. What I use is Vital Wheat Gluten with Vitamin C. Made by Hodgson Mill.
It is in the aisle with the baking goods. It is supposed to produce higher
loaves, lovelier shaped loaves,softer texture crumb and extend the shelf
life of baked goods.
