I'm afraid I'm not going to be of much help here- all my stuff is done
very hot.  The only cold pack method that I even have theoretical
knowledge of is 'cold-pasteurization'- the not so sinister sounding name
give to irradiation.  

I would second Chilemans' recommendation of contacting your food science
dept at the local university.
