[CH] Pickled Limes

Hi all,

Last July I filled a couple of large preserving jars with limes as per
Luke's recipe. Which I stashed at the back of a cupboard.
Yesterday looking for something to go on the Snapper caught from the
beach Saturday evening.:-)
I pulled out this jar of limes which had softened and were surrounded
with a golden jelly. Really tasty 
The lime flavour seemed to have intensified and not as salty as I would
have expected. Bit light on heat, but nothing that a good shot of
"Jim/Tony" special sauce couldn't fix. Eh Jim?

Chilies on black plastic looking great after a slow start and only just
flowering. Strange season for some reason.

Hi Doug you have almost talked me into trying to make a rice risotto one
day when I have a week to spare:-)

If its any consolation to friends north of the equator. The sun is
rising further north every morning and will start to make your days
longer and warmer very soon.
