Just joined the list a couple of days ago. hope to gain a little knowledge about chiles. Have a couple of questions

1. Recently bought Cascabel Chili Pods and Guajillo Chili Pods.  What is the heat factor of them and what type of flavor do they have?

2. When chiles are dried and then ground up why is it suggested to remove the seeds and membrane? Do they increase heat, cause food to be bitter, etc.
