When the blossom end of the fruit opens and they're a nice ripe color.
Color depends on variety, most common in the South is Turkey fig which
is a maroon brown when ripe. You want them soft but not overripe, if
they're still hard but the right color they will ripen somewhat after
picked but, IMHO, are best dead ripe.
