So true...

But you know, one of the best restaurant jobs I've had was a funky
vegetarian place (now defunct, sadly, but one of the owners started up a
new place...hmmm..) that not only allowed the Hendrix to blare (I baked
there twice a week as well as cooked...makin' bread at 3am with "Bertha"
[195? Hobart monster mixer] whilst jammin to a little Electric Ladyland is
an experience everyone should have...oh yeah...) but taught me mucho about
spice/herb use and really got the chilehead blood going. Simplicity at
it's best. Cheese ravioli with green chile and red chile sauces; all
sortsa salsas (my first intro to pineapple-"chile" salsa); black-eyed pea
(very chile-ed) gumbo (sadly lost the recipe), and more.

Alas, I was in the last 2 years of my loooong drunk and left the place.
Hindsight hurts. Silver lining, though, is the memories and the chile
experience.

Hey...the Chile Experience. Are you Experienced? Groovy...

'Nuff ramblin'. 'Pologies...

Peace, Hendrix@3am, and Chiles.......
