[CH] Spicy sweet sauce

Haven't used honey but I do a spicy baked ham as follows.

Ham (cheap one) bone in, full or butt half.   Stab all over with ice
pick or  chef's fork.  Place in deep pot and place in oven at 200
degrees (yes, two-hundred) for 45 mins to 1 hour to extract as much of
the salty liquid as possible.  Remove from oven, discard liquid.
put  several chiles de arbol - or your favorite hot chile around the
ham.
Pour over the ham at least a pint of maple syrup
return to oven, and cook for at least 2 1/2 hours, turning ham every 30
minutes.
After cooking, strain the liquid and freeze t can be used again at least
once.
