 Far as I am concerned, the best thing to do with catfish is bread it and 
fry it!  There is a good commerciat breading mix for fish out there 
called Golden Dipt (usually disclaimer) which we just punch up with a 
little powdered hot stuff!  (A new use for Calvin's Magic Powder?  
Hmmmmm. . )  

Serve with fried (what else!) potatoes and some freshly made cole slaw 
for texture and temperature contract.    Pretty nice!
