Run, don't walk back to your Wegman's and buy up that cheese!  Green Habs
(the unripe kind) are used in processed chile products (El Yucateco Green
Salsa Picante de Chile Habanero comes immediately to mind).  I find they
add a bit more acidity or tanginess <sp?> to the flavor and are thoroughly
acceptable.
