I recently bought Joy of Cooking and The Prudhomme Family Cookbook at 
Borders.  I've since seen the Joy of Cooking for $16 at Sam's.  Joy of 
Cooking now has a halfway decent section on peppers.  Many more pepper 
based recipes than previous editions.
