If you're ever in Portsmouth NH, check out The Blue Mermaid World Grill. 
They make a great smokey salsa that is unique and ADDICTIVE.  I think
they make it with poblanos rather than chipotles.  They are also one of the
few places I've eaten with the word "habanero" in their menu at least 3
times.  They've cut down on the heat level in recent years but I think they
do a heat-lovers night on Wednesdays.  Unfortunately, I don't make it up
there that often.
