Just thought I would add my 2 pence worth to this debate.  I agree with
the general finding that flavour is more important than heat.  I can
always make something hotter (I spend my life doing this!) but if a sauce
tastes of nothing much besides heat then there's not a lot I can do
about it.

What especially prompted this post was a package I received this AM
containing, among other CH items, several hot sauces.  Late for work as I
was, I couldn't *not* try them.  The most disapointing had to be "Last
Rites".  Nice label and v. hot but where was the much acclaimed scotch
bonnet taste?
My current fave sauce has to be the Cholula I think.  Unusual, and an
attractive orangey coulour.  Other gooduns IMO are Hot & Honey and
Ultimate Burn.  

But does anyone know of a sauce with a really good bonnet flavour?  This I
would sell my soul for....
