Try this...

Cut sweet potato into bitesize slices or chunks.  Braise the pieces 
in pumpkin ale (or other liquid of choice) until just about done.
Spread chipotle butter on the taters and put under the broiler for 
a few minutes.  You can do the same with sweet pumpkin (not the same 
as the big halloween jack-o-lantern pumpkins).  Both have been a 
fall/harvest season and Thanksgiving tradition 'round our house for 
the last two or three years.  Mmmmm, mmm...good stuff.
