->         What would be a good choice for a "next step up in degree of
-> heat" from the Japaleno Pepper?   Also, what is the very  hottest pepper

As for the next thing to try, I'd suggest serranos.  They're delicious.
reliably prolific, and one step up in heat from jalapenos.

And you can grow virtually any pepper where you are; southern Missouri,
southern Indiana and about the northern two-thirds of Kentucky are
really pepper heaven. (I'm in Louisville.)  So when you're ready for
Habaneros and Red Savinas and such, go for it!
