<<TRY soaking the Feta overnight in fresh water.. something I learnt off my Aunt's Bulgarian Husband.......>> If you buy a good French Feta it is so much better than many from Greece or Bulgaria that come into the states. I think maybe the shipments are regular and the French is fresher and has much less salt as the brine doesn't need to be so strong! Mary-Anne
