Well, I suppose you could marinate the chops, but I don't.  They are usually
tender enough and the resulting sauce has plenty of flavor.  Letting the
chile/spice/vodka sit alone draws the flavors out/together.  I usually don't
do much to the chops, just a little crushed black pepper and salt.
  Maybe it's just me, but when I salt steaks/chops with a bone in it, I try
to keep the salt mostly on the bone.  My thoughts being I don't want the
salt to draw the juices out of the meat and the salt gets to migrate in the
skillet anyway (not so much on the grill).
