[CH] Length of time to harvest

Hi all,

While we're on the subject of length of time to harvest, could 
someone please explain how this works?  This is an ongoing 
discussion between my boyfriend and me.  A package of radishes 
for example, which are planted directly in the garden, say 
20-30 days.  A package of tomatoes, peppers or anything meant 
for transplant say 80-100 days (for example).  Now I KNOW this 
means from transplant but how do I prove it with some 
documentation?  If the seedlings are grown for 60 days before 
transplanting, we're NOT going to have mature fruit 20 days 
later.  Help me with some documentation please!  I've gone 
through all my gardening books trying to prove my point and am 
looking like a fool here :)

1995 and have benefitted immensely.
