MMMMM----- Recipe via Meal-Master (tm) v8.06
 
      Title: Spicy Pork And Kumquat Stir-Fry
 Categories: Epicurious, Fruit, Pork, Chiles
      Yield: 4 servings
 
      1 lb 1/2-inch-thick boneless pork
           Loin chops (about 6) cut
           Crosswise into 1/3" strips
      2 tb Hoisin sauce
      1 tb Oyster sauce
      1 tb Cornstarch
      2 ts Chinese five spice powder*
      5 oz Kumquats, quartered
           Lengthwise, seeded
      1 tb Sugar
  1 1/2 tb Hot chilli oil or chilli
           Sesame oil*
      2 tb Minced peeled fresh ginger
    1/2 c  Canned chicken broth
      1 ts Rice vinegar
 
  *Available at oriental markets and in oriental section of some
  supermarkets.
  
  Blend first 5 ingredients in medium bowl. Combine kumquats and sugar
  in small bowl. Let stand 30 minutes, stirring kumquat mixture
  occasionally.
  
  Heat oil in heavy large nonstick skillet over high heat. Add ginger
  and stir 1 minute. Add pork mixture and stir-fry until pork is just
  cooked through, separating pork strips, about 3 minutes. Add kumquat
  mixture, broth and vinegar and stir until sauce boils and thickens,
  about 1 minute. Season with salt and pepper.
  
  Round out this fast and easy entree with steamed rice and a
  sprinkling of finely chopped green onions.

      Title: Chicken Salad With Cilantro And Ginger
 Categories: Epicurious, Salads, Poultry
      Yield: 4 servings
 
    1/2 c  Soy sauce
    1/4 c  Oriental sesame oil*
      2 tb Rice vinegar
      2 ts Grated peeled fresh ginger
      1 lb Skinless boneless chicken
           Breast halves
      2 tb Vegetable oil
    1/2 ts Chilli oil*
      1    Head romaine lettuce, torn
           Into bite-size pieces
    1/2 c  Fresh cilantro leaves
    1/2    Red onion, thinly sliced
      1 lg Ripe tomato, sliced
    1/4 c  Sesame seeds, toasted
    1/4 c  Slivered almonds, toasted
 
  *Available at specialty foods stores, oriental markets and in the
   oriental section of some supermarkets.
  
  Combine soy sauce, oriental sesame oil, vinegar and ginger in small
  bowl. Cut chicken crosswise into 1/4-inch-wide strips. Place chicken
  in medium bowl. Mix in 1/4 cup of soy mixture. Let chicken marinate
  30 minutes.
  
  Heat vegetable oil and chili oil in heavy large skillet over medium
  heat. Add chicken to skillet and cook until springy to touch,
stirring
  constantly, about 2 minutes. Transfer chicken to plate and cool.
  
  Combine lettuce, cilantro, onion and tomato in large bowl and
arrange
  on platter. Top mixture with chicken. Sprinkle salad with sesame
  seeds and almonds. Spoon some soy mixture over chicken salad. Serve,
  passing remaining soy mixture separately.
  
  Serves 4.
