Hi Folks,

Thanks for all the pointers about Emeril's.
Too many replies to answer individually.

Is there info on Internet about how to convert
raw Jalapeno Peppers I buy at store, into
the nice Vinegar soaked Japapeno's I eat at 
favorite Taco Stand?

Yesterday, tried to eat a tiny piece of fresh Jalapeno Pepper I just
bought at store, but found it was WAY TOO STRONG. Also, found juice
burns my hands and stings my eyes. Just ate flesh, discarded seeds and
other parts.

What am I doing wrong?
