Well my old china, (Trans. china plate = mate) Cockneys have long been
using chilli infused malt vinegar to pep up the traditional East End dish
of Pie & Mash (and eels, too). Home baked individual minced meat pies,
mashed potato smothered with liquor (a green gravy made from the stock that
the eels have been cooked in, flavoured & coloured with lots of parsley).
Individually very bland, but together with lots of pepper & a good shake of
chilli vinegar, it's absolutely delicious (in a comfort food kinda way).
