In my experience, most of the "Island Sauces" are variations on the
following themes:

Chiles (Scotch Bonnet or Habanero)
Cane Vinegar
Salt
Carrots
Gum
Onion and/or garlic
Turmeric (yellow mustardy looking stuff)

Ingredients not necessarily listed in order.  While in the West Indies,
we found that although their are a myriad of labels there are only a few
processors.  Most are co-packed and privately labeled.

No monkey glands or curried goat parts :-)
