Sam,

Unfortunately, there is nothing that will substitute for hominy. This is
corn (do you call it maize?) that has been soaked in a solution of lime
water. calcium oxide. The corn itself is the kind used for feed rather than
the sweet corn served at meals. If you can get the raw materials and would
like to make your own, let me know and I'll send along a recipe from one of
Diana Kennedy's books on Mexican cooking.
