My wife got ill today..... made my kids some hamburgers on there request,
and had to cook some diner for myself too... .
What came out of it was simple and very tasty... well I liked it, and
therefor like to share it with friends!
Here it is...

I called it 'Private egg's' (as I was the only one eating it..)

1 med onion, sliced in 2" pcs.
2 jalapeno's, whole minced
1 slice of smoked ham (about 20 gr.) minced
2 egg's
3 table spoons milk
2 table spoons 'Heinz' tomato ketchup
1 tea spoon Worcestershire sauce
1/2 tea spoon garlic powder (ran out on the fresh ones..)
fresh ground black pepper (don't be spare the mill)
salt, to taste
2 table spoons (extra vierge) olive oil
2 slices white bread, fresh roasted.

Break the egg's into a mixing bowl add the milk, ketchup garlic powder,
Worcestershire sauce, pepper and salt and mix thorough, set aside.
Take a frying pan and bake the onions in the oil till they start to brown,
put it the jalapeno and ham and let them bake for 2 minutes more.
Add the egg mixture and scramble a little till the egg is going to set, put
an cover on the pan and let it fry for a few minutes on low heat until
solid.

Dived it over the bread... and enjoy!
I had a nice glass of pino noir to accomplish, lightly chilled... nice!

Hot regards
