Dropping chiles into sherry is recommended for flavouring the sherry
(I always have a bottle of this stuff in the cupboard). It's also
recommended for preserving the chiles - in this case you pack a jar 
tightly with the chiles and pour over just enough sherry to cover them. 
(There's a recipe in Joy of Cooking if I remember rightly.)

My own favourite is chiles in ginger wine. Again, both the wine and the 
chiles are excellent in anything you like ginger in. (Try guacamole - far
from authentic, but excellent.)
