[CH] Tofu

Well, for Dan, and anyone else who wishes their mental abilities to
decline rapidly(I'm 74, and I run a 500k per year business), due to
eating this stuff which the Chinese have been eating for thousands of
years....here are a couple of tofu recipes:
Ma Po Tofu
1	tbls hot bean sauce
1/2  lb ground pork
1	tsp soy sauce
1	tsp sugar
Mix pork with hot bean sauce, soy sauce, sugar, and add a dash of sherry.
Let this marinate for at least half an hour. Meanwhile weight one block
of tofu, with a plate, and place anything heavy(can of beans?)on the
plate, to remove a lot of the water from the tofu...half hour under the
weight should do this as well. This should be a 1 lb medium block of tofu
2	tbls peanut oil
2	tbls minced ginger root
2	tbls minced garlic
1/2	cup chicken stock
1-2	minced habs(use gloves, or suffer)
1/4	cup minced scallions(green onions)
sesame oil  and 2 tsps corn starch mixed in 1 tbls water
Heat a wok or large skillet over high heat, and add the oil, then add
ginger and garlic and stir fry for a minute or so, until fragrant...add
the pork mixture, and stir fry for another minute, then add the chicken
stock, and cook for about five minutes. Cut the bean curd into one inch
cubes and carefully add to the meat mixture...add the scallions and the
habs, stir fry for another minute and add the sesame oil, mix around and
thicken with the corn starch mix....great dish, great hab flavor, so
good that you will run around, babbling more more(due to your mental decline)
