[CH] Tofu, again!

Here is another one to hasten your mental decline! Fried fish with tofu
and peppers:
1	lb firm white fish, halibut, skate or similar
1	lb block of medium tofu, weighted and drained
oil for deep frying
1	red jalapeno)    remove seeds and coarsely chop both these chiles
1	green jalapeno)
1	tbls shredded ginger root
1	cup water
1	tsp soy sauce
1	tsp sherry
1	tsp sugar
2	tsps corn starch, mixed with 2 tbls water
Cut the tofu into 8 pieces, and deep fry in a wok, until lightly browned
and remove to a plate...wipe out wok, add a little more oil, and fry the
fry the fish for about two minutes per side. Remove fish and keep it warm
then to the wok, add the ginger, peppers, water, and the reserved tofu,
lay the fish on top of that, sprinkle with minced scallion, cover and
cook for 3-4 minutes, then carefully remove to a serving platter. To the
wok, add the sherry, soy sauce, sugar and the corn starch mix, stir
until thickened a little, sprinkle with sesame oil, and pour over the
fish and tofu....add more chopped green onion and serve! This one will
hasten your mental decline, pleasantly! Cheers, Doug in BC
