You could try them in an egg curry.

1pint chicken stock
2 onions grated
1 aubergine cut into thin strips 3 teaspoons or more (preferably more) 
of whatever chile powder you like
2 garlic cloves sliced
1 teaspoon ground turmeric
2 teaspoons curry powder
3 tablespoons tomato puree
salt to taste if you use it( i leave it out)
6 hard boiled eggs.

Put everything into a large pan except the eggs.  Bring to yhe boil and 
simmer for 30 mins.  Put the salt in now if you want.  Take the shell of 
ther eggs and cut in half lengthways.  Put into sauce and heat through.  
this can be seved with rice or Nan breads or chapati's.
