This was something I came up with for breakfast on Sunday and I was
asked to cook it again soon, so I guess it can't have been too bad.

Breakfast mush

2 tbsp olive oil
1 large onion, finely chopped
1 leek, finely sliced
2 cloves garlic, minced
2 tomatoes, chopped
1/3 cup sliced mushrooms
4 pieces last night's baked potato, which were tossed in olive oil, hab
powder, lemon thyme, thyme, salt and pepper prior to baking, diced
3 serranos
1 tbsp Worcestershire sauce
pinch thyme
good grinding of black pepper

Heat the olive oil in a large pot over med-low heat and add onion,
frying until soft. Add leek and fry until soft. Add garlic, tomato,
black pepper , peppers and Worcestershire sauce, and fry until husband
decides he's going to have a shower. Toss in remaining ingredients and
fry until it looks not too liquid, or until husband decides he's going
to get out of shower. Goes well with bacon and eggs or (for me) on it's
own with tomato-jalapeno sauce.

Serves 2.
