           Fiery Habanero-Peach Paste:
      1    ripe habanero; seeded
      1    green habanero; seeded
      6    ripe superchilies; seeded
      1 tb peach jam
      1 tb Neysa's chile vinegar
      1 tb white vinegar
      1 tb HP sauce
      1 tb ketchup
           Medium Habanero-Mango Sauce:
      1 tb paste from above
    3/4 c  mango nectar
           Mild Apricot Salsa:
      1 ts mango sauce from above
      1 ts lemon juice
      1 ts peach jam
      2    apricots; pitted and diced
      1    scallion; chopped
      1    parsley sprig; minced

The very first of my habs from last fall's seeds have ripened. It's time
to experiment. I also found a one cup blender attachment that's perfect
for this sort of thing. It's designed to make baby food in.

Add the paste ingredients and blend until pureed smooth. Now this stuff
is *HOT*! I had visions of adding mustard and making a wet rub for ham
but one little tiny taste told me that only a Certified Chile Head
Crazy would attempt this.

So I put a tablespoon of paste into a small saucepan, added about 3/4 of
a cup of Mango Nectar, a soft drink and brought the mixture to a boil.
Simmered for 5 minutes, let cool and bottled it in a recycled Frank's
hot sauce bottle. Now this has a nice heat level: the hab taste still
comes through but the mango predominates. There are tamarind hints from
the HP sauce and enough sugar in the peach jam to keep the vinegar from
being overpowering. This stuff is good on ham and chicken legs.

Final step. Fix small amounts of mango sauce, peach jam and lemon juice.
Marinate chopped apricots in it for an hour or so. Sprinkle with chopped
scallion, both green and white parts, and a parsley sprig or two. (I was
out of cilantro.) Garnish grilled chicken legs and thighs with the salsa
and serve. Good stuff.

Now to read up on peach-apricot-mango chile sauces-salsas-chutneys and
refine this a bit.
