[CH] Hurry up and ripen already!

Hey CH folks.  I planted 18 plants earlier this year in the hopes that I would 
get to enjoy some tasty chiles.  Alas my Jalapenos have ripened and have started 
to bring pleasure to most of my meals, however I also planted some Cayennes some 
other chiles that were called Mexican Reds or something like that.  As I 
mentioned, the Jalapenos are ripe and flavorful (not much heat though) but the 
others are not quite ripe or so I think.  Mainly, do they turn red on the vine 
or do they get their color after the picking?  Thanks.
