	Is it possible to dry habenero peppers in the oven? We wanted some
dried peppers to grind into powder, but its too cold here, and we don't have
a food dehydrator. Thanks!

As a happy participant in the 3rd Annual Red Savina group purchase, I found
my self in need of a near small commercial technique and lacking a
dehydrator used the following method.  Note that a key may be a very well
calibrated oven and preferably one that can operate in convection mode.

1) Pre heat the oven to 170-190 degrees but no hotter.
2) Arrange the peppers on a cookie sheet you may not want to use for
anything else for a while so that they are not in contact with one another.
Note: check for internal mold first if using habs or other more fleshy
varieties with a tendency to rot from the inside out.
3)Stick em in the oven and leave them alone for 5-6 hours minimum. I
admittedly am using a relatively high end convection oven but I found that
if I put them in as I was making the next morning's coffee (around 10 P.M.),
by 6 the following morning they were done, had not burned or charred and
since everyone was asleep for most of the time I received no family
complaints . . . until I ground them up and for that I used a plain old
Braun coffee grinder that is of a dramatically different color than the one
we use for coffee beans.
