This was tonight's dinner. It was quite good. I think the meat could've been
a bit softer but the flavor was good. It was mildly spicy. Add extra heat if
you wish (and I know you will.)

I served it with baked hush puppies (trying to watch the weight a bit but
this was a splurge meal tonight. Not the ordinary.) and sauteed green beans
with garlic. Yum.

1 3 lb boneless chuck roast -- trimmed of fat
   1 tbsp vegetable oil
   2 cups water

     1/2 cup picante sauce
   1 lg onion -- chopped
1 lg clove garlic -- chopped
     1/4 cup white vinegar
     1/4 cup worcestershire sauce
   1 tbsp mild chili powder

Place onions and carrots in the bottom of crockpot.

Heat a cast iron pan on the stovetop over medium-high heat. When hot,
sprinkle chuck roast with a bit of salt. Add oil and brush all over pan.
Place roast in pan and sear on both sides, until browned. Remove and add to
crockpot.

Mix together the rest of the ingredients and pour over the roast. Set on
HIGH. Cook for 4 hours.

Serve with hush puppies and a vegetable.
