[CH] Chile Sauce

Here is a super easy recipe for chile sauce that can be whipped up in about
15 minutes.  Great as enchilada sauce, and I like to simmer hunks of meat in
it all day.


Ingredients:

1 cup diced onion
2-3 cloves garlic - minced
1 cup tomato sauce
2 cups broth (or bullion)
1 teaspoon oregano
1 tablespoon cumin
1/4 cup chile powder (vary your heat to taste - I usually mix several kinds,
even cheap commercial powder makes a great sauce)


Heat a small amount of oil in a saucepan
Add onion and sauté until translucent
Add oregano, cumin and chile powder - sauté briefly 
Add broth, tomato sauce and garlic
Bring to a boil then reduce heat and simmer 15 minutes stirring occasionally


I have also left out the tomato sauce and used green chile powder and some
chopped roasted green chiles for a great green sauce.
