Depending on what part of the world one is from....

                Choko = chayote = mirliton

The young shoots are edible as well as the squash-like fruit.

First, some Asian recipes from some Australian buddies....

      Title: Tumis (Stir-Fried Vegetable)
 Categories: Indonesian, Vegetables, Chilies
      Yield: 2 servings
 
    250 g  Vegetable of any kind,
           -eg shredded cabbage, choko,
           -sliced fresh beans, bean
           -sprouts, chopped carrots.
      1 cl Garlic, smashed & chopped
      1    Brown onion, finely sliced
      2    Fresh chillies (Jalapenos)
           -deseeded and finely sliced
    1/2 ts Cumin seeds
      1 ts Coriander powder
      2    Curry leaves
      1 ts Laos powder (Galangal)
      1    Stem lemon grass, finely
           -sliced, or 1 ts powdered
      2 ts Fish sauce
      1    Dash dark soy sauce
           Salt to taste
      2    Spring onions, chopped
      3 tb Vegetable oil
 
  Heat the oil in a wok or a frypan and fry the onions, garlic,
  chillies, laos, lemon grass, coriander, cumin and curry leaves until
  soft. Add the vegetable and stir fry until it is lightly cooked but
  still crisp. Add the fish sauce and dash of soy sauce and salt to
  taste, stir again, garnish with chopped spring onions and serve.

      Title: Chinese Rojak (Similar To Gado Gado)
 Categories: Chinese, Main dish, Vegetables, Chilies
      Yield: 4 Servings
 
    1/2    Pineapple, peeled, cut in
           Wedges
      1    Green mango, peeled, seeded
           And cut in wedges
      1    Choko, peeled, sliced thinly
           And lightly salted
      1 sm Yam bean, peeled and cut in
           Wedges
      2    Lebanese cucumbers, cut in
           Wedges
      1 bn Kangkong (water convolvulus)
           Or 1 bunch watercress
      1    Soy beancake, cubed
    1/2 c  Roasted peanuts, roughly
           Ground
           Sauce:
      1 tb Tamarind pulp, reconstituted
           In 1/4 cup water
      2 tb Kechap manis
      2 tb Chilli garlic sauce
      1 tb Sugar
 
  Combine sauce ingredients and stir until sugar dissolves.  Arrange the
  prepared fruit, vegetables, kangkong and beancake on a platter, pour
  over sauce, sprinkle with peanuts and serve immediately.

      Title: Green Curry of Pork and Choko
 Categories: Australian, Curry, Pork
      Yield: 4 Servings
 
      2 tb Oil
    500 g  Diced pork
      1 lg Onion; chopped
      2    Cloves garlic; crushed
      2 ts Green curry paste
      2    Chokoes; peeled, seeds
           -removed, roughly
           -chopped
    400 g  can coconut milk
      1 ts Caster sugar
      2 ts Fish sauce
 
  Using a wok or large saucepan, heat half the oil and quickly seal the
  pork in batches and set aside in a bowl for later.
  
  Heat the remaining oil in the wok and saute the onion and garlic. Add
  the curry paste and stir through before adding the choko, coconut
  milk, sugar and fish sauce. Bring to the boil, then reduce to a simmer
  and cook until the choko is almost tender.
  
  Add pork to wok and continue cooking until pork is cooked through and
  choko is tender. Taste and adjust salt content with fish sauce. Serve
  with steamed jasmine rice.
