I made some Habanero-Lime ice cream this weekend. It came out great, IMHO.
I used a vanilla ice-cream recipe, reduced the vanilla, added habaneros and
lime zest. I'll put the recipe below (it is for half a batch which is what I
made for a first try). I would reduce the vanilla even more, but some people
said they liked the vanilla, so it's up to you. I used lime zest because I
figured lime juice would curdle the milk. This time I used fresh habeneros,
but I think I will roast them next time to get less of a crunch in the
ice-cream.

  3 eggs
  2 cups milk
2 cups whipping cream (Fresh heavy cream)
  1 cup sugar
  1 tsp. vanilla
  zest of 2 limes
  4 habaneros minced very fine

With an electric mixer, beat the eggs until thick. Add the sugar and mix some
more. Add the cream - keep mixing. Stir in the vanilla, habanero, and lime
zest. Pour mixture into the ice-cream tub and add milk. Stir. At this point
I let it sit for a couple hours (in the fridge!!) to let the flavors mingle.
Then make the ice-cream according to the instructions of your ice-cream maker.

Let me know what you think.

-Ben
