Oven BBQ'ed chicken legs or thighs.  These can be frozen after cooking
and put in baggies.  

Gnawing on these frozen or slightly thawed is actually not bad.

Pack in a 6 pack soda cooler.  Also pack some frozen grapes.  These are
remarkably refreshing, but are best slightly frozen rather than frozen
hard.  If you plan a little ahead and unpack, the chicken will thaw out
and stay cool, or you could reheat it.  Wrapping in foil and reheating
on the engine is another option.  There once was a book about cooking
on your car engine.

Also consider sliced pepperoni and cheese with crackers and/or mini deli
rye.
