Hi everyone,

Last night I was making a wonderful chilli sauce type salsa thing. I used a
couple of my freezed chillies (Cherry Bomb Hydrid) which are meant to be
really hot. They hardly had any heat at all. Is this because I froze them?
Can some one help me out please?

Anyway, the recipe for the salsa is as follows:



SAUCE PIQUANTE
INGREDIENTS

1/4 cup of olive oil
1 medium onion finely chopped
6 garlic cloves finely chopped
1/2 green capsicum
1/2 red capsicum
1-2 hot chillies seeded and finely chopped (obviously use more if you want
to)
3 cups of canned tomatoes with juice, finely chopped
1 teaspoon of dried thyme
1 teaspoon of dried marjoram
2 bay leaves
2 tablespoons of Cajun spice mix
2 table spoons of red wine vinegar
1 table spoon of Worcestershire sauce
1/4 teaspoon of tobacco sauce
1 teaspoon or more of salt
1/4 teaspoon ob black pepper

1. Heat the oil in a frypan or saucepan over medium heat and sauté the
onions garlic, capsicum and chillies until the onion is soft (3 - 5 mins)
stirring occasionally

2.Stir in all the rest of the ingredients, cooking over medium heat for 10 -
15mins.

You can use different spices to your liking if you don't have these ones.

The recipe makes a hole litre (4 cups) so cut down the mixture if you don't
want as much.

It is absolutely delicious! Hmmmm....
