In Montreal you'll have a nice dosage of ehtnic oriented restaurants, many 
of which will be glad to spicen up your dish at your request. There are so 
many resaturants in Montreal that I cannot name you one specific one that 
is good. For a good start of visiting Montreal check out the following site 
http://english.montrealplus.ca/Montreal/ there you'll find lot's of links 
and reviews for restaurants.

As for markets, the Atwater market along with the Jean-Talon market are two 
great places to get either hot sauces, peppers, or just generally good food.
