We drove over to Columbus, Indianer to meet Jim Campbell and pick up some
goods he was wirking on for us. He walked around back of this restaurant
we met at, threw open the stainless steel doors of this foodish-kind of
trailer that looked like it belonged at a county fair, and showed me 100
pounds American of just-being-smoked purplish-colored habs for chipotle
that smelled like bliss. It was the biggest smoker I've ever seen and by
far the biggest pile of habs in processing for anything.
100 pounds of habeneros in June? Now *that's* a big hab-it.
