[CH] For Mike: Black Bean Dip

I finally found a black bean dip for Mike. Here it is -

Black Bean Dip
Hot Licks by Jennifer Trainer Thompson
Serves 6

1-16 oz can cooked black beans
1 small ripe tomato
1/2 red bell pepper
2 medium cloves garlic
1.5 tbsp chipotle red sauce
1.5 tbsp caribbean-style sauce
2 tbsp cilantro, mashed
1 cup Monterey Jack or cheddar cheese
2 tbsp scallion or cilantro, chopped

In a blender or food processor, combine the beans, tomato, bell pepper,
onion, garlic, hot sauces and cilantro. Process until smooth yet slightly
chunky. Scoop bean puree into a saucepan and cook over low heat until hot,
about 10 minutes. Stir in the cheese, if desired, and cook until cheese is
melted. Serve immediately, garnished with scallion or cilantro.
