According to "The Whole Chile Pepper Book", vindaloo
did originate in Goa and is traditionally made with pork.
But the pork would be only for the Christians and not
for the Hindus or the Muslims.  I've eaten it many times
in Indian restaurants but I've never seen it offered with
pork, only lamb, beef, shrimp and I think chicken.  I
prefer the lamb.  Good and hot!
