You might consider reserving some of the liquid you are using in your water
pan for mopping the turkey during smoking.  As a general rule of thumb, I
usually mop whatever I am smoking about every other beer or so.

If you don't have large enough papers with which to smoke the bird, I would
recommend taking a bunch of 1.5's and sticking them together.

Last note:  if you do use the liquid as a mop, you might want to consider
diluting it with a little beer and/or vinegar to prevent caramelization of
the sugars during the smoking process.  Good luck and I anxiously await the
