Spanish for cumin, I'd say: "cummin cyminum". If that doesn't help
you with the Dutch word, and you have a copy of the new testament
handy, try Matthew xxiii. 23 (no religious content - just a pointer
to the Dutch word).

Cumin is essential for chile, though I'd omit the onions and tomatoes, myself.

No chile content, but here's a very old recipe for cumin lovers (from
memory and book on ancient Greco-Roman cooking). I might have to get
some tuna steaks this weekend...

olive oil
fines herbs
1-2 tuna steaks or shark steaks
cumin
salad

Coat the bottom of a cast-iron pan in olive oil, and add the fines
herbs (or whatever herbs you want to try). Dredge the tuna or shark
in cumin, heat the oil, and cook the steaks for a few minutes on each
side, until done.

Slice the cooked steaks and serve over salad, dressing with the seasoned oil.

...and as always, "add chiles to taste."
