I have made a rub for turkey with chipotles that turned out great.
Enough for a small turkey:
In a blender or food processor mix
1 cup olive oil or melted butter
1 medium onion
4-5 cloves garlic
1 can chipotles in adobo sauce
Dash of oregano
salt and pepper to taste
Blend to a creamy consistency and then rub over entire bird, working under
the skin where possible. Let marinate in the refrigerator overnight and
roast as normal. Very tasty!

I like to use cayenne and beer and a bigger needle (as Hobby Farmer
sez...). Then use a chipotle based rub. But injecting it would be good
too. Just think the cayenne tends to "round out" the other flavors.
And, again as HF sez, most non-CHs really like this stuff if used in
moderation.
