[CH] sweet and hot

This is a great relish for having around all the time.  It's also a great
change of pace from salsa.   I'm a great fan of 'sweet-hot.'

Sweet & hot mango chutney with habanero

1 cup prunes
1 1/2 cups apple cider vinegar
2 cups brown sugar
1 teaspoon coriander seeds, ground
1/2 teaspoon ground cinnamon
1/2 teaspoon ground cardamon
1 teaspon ginger
1/2 teaspoon salt
1-4 fresh habaneros, chopped finely
2 fresh mangos, chopped
1 cup raisans or currants, chopped
1 cup onions, chopped
2 medium tomatoes, peeled, seeded and chopped
1.4 cup lemon juice

Cover the dried prunes with water and simmer for 10 minutes. Drain and chop.

Combine vinegar, sugar, coriander, cinnamon, salt and pepper in an enameled
or stainless steel pan. Heat to boiling: add prunes, apples, currants,
onions and tomatoes.

Cover and boil stirring frequently with a wooden spoon for about 20 to 30
minutes.
