Van Houtens is available here in Oz and is far superior to other Cocoa's.(sold in tins) ..
I would find it curious that Hershey's makes a Dutch Process Cocoa as their chocolate had some problems beiing
recognised as such here in Oz some years ago, as it was deemed to have to low a cocoa percentage to comply with
our product description laws,.
Mind you Nestle here in Oz is labelled as a Compounded Chocolate,
I'd tend to stick to Ghiradelli if they make one,
Standard Disclaimers apply ( although I do get a obscene ammount from my brother as his company sends him 3-400
pounds for distribution to clients and familly at Christmas time)..
For cooking Moles here I tend to use a Cadbury Club chocolate (DARK) 50% cocoa Fat???
FWIW good 70% chocolate cuts the burn when I have overindulged on El Grande's Pods..
