[CH] Hot potato soup

Greetings

Just the thing for cold North Dakota days -- (or as my southern relatives
say 'North Colder')


Jalapeno/Potato Soup

6 large potatoes, peeled and cut into 1/2 inch cubes
2 large carrots, peeled and shredded
1 large onion, minced
Jalapenos to taste, sliced
1/2 pound bacon
Salt
Pepper
Water to cover vegetables
2-3 cups whole milk  ( I use whole milk -- makes the soup the way I like it,
some people may want to use cream or low-fat milk).

Dice bacon, brown in soup kettle and drain.  Add a small amount of bacon
grease back into the kettle, brown onion.  Add potatoes and carrots, cover
with water and bring to boil.  Reduce heat and cook till vegetables are
tender.  Add sliced jalapenos.  Add whole milk, heat to just about boiling,
reduce heat and simmer for 20-30 minutes.  Serve hot with fresh garlic bread
and/or oyster crackers.  Does a good job of warming a person up on a cold
day.  Great for when you have a cold, too.  Better than chicken soup!
